The concept of health is complex. Health is a state of complete physical, mental and social well-being and not merely the absence of disease.
We believe there is no such thing as forbidden food, but rather an unbalanced diet. A healthy nutrition is varied, sufficient and capable of providing a nutritional balance to each person.
Food in itself is not good or bad, it depends on the amount of food and frequency at which we eat it. A diet consisting of several food groups provides all the required nutrients.
These foods provide different nutrients: proteins, carbohydrates, dietary fiber, vitamins and minerals. They prevent nutritional deficiencies and contribute to normal growth and good health. For example, dairy products provide calcium, vegetables are rich in vitamins A and C, meat contains iron, grains supply fiber and energy, and nuts, unsaturated fats. They are called protective because consuming them on a daily basis "protects" us from malnutrition.
Within this group are: fruits and vegetables, dairy products, meat and fish, grains and legumes, oils and nuts.
These foods are high in added sugars, fats and/or sodium in their composition. They are called occasional because they are not essential to be well nourished and may lead to health issues if consumed in excess.
This group includes: fatty foods (mayonnaise, cream, butter, solid fats) and free sugars (sugar, sweets, marmalades, etc.), sugary drinks and infusions, alfajores, sweet cookies, chocolates, confectionery, snacks/appetizer products, sweet or salty breaded products, cakes and sugary desserts. These foods can be eaten without any problems in a balanced diet if they are incorporated in appropriate portions.
Each type of food has an optimal share in a balanced diet. A portion is the amount of food typically consumed by a culture. The right portion size is the optimal portion of food for each consumption occasion.
